Greek Salad
No lettuce. None. A horiatiki is chunks of ripe tomato, cucumber and a slab of feta wearing an olive oil coat, and it is somehow better than most hot dinners.

What you need

How you make it
Salt the tomato wedges in the serving bowl and leave them 3 minutes; the juice they release becomes half the dressing.
Soak the sliced red onion in cold water for those same 3 minutes to take the harsh bite out, then drain well.
Add the cucumber, pepper rings, drained onion and olives to the bowl and toss gently with your hands.
Lay the slab of feta on top whole, do not crumble it, and pour the olive oil over the cheese so it runs down through the salad.
Shower the feta with oregano, add a final pinch of salt, and serve immediately with bread to mop the bowl.
