How you make it

  1. Toss the pork cubes with the oil, lemon juice, oregano, garlic, salt and pepper and leave for 5 minutes while the pan heats.

  2. Thread the cubes onto skewers, packed snugly but not crushed together, so they cook evenly.

  3. Heat a griddle or heavy frying pan over high heat until it smokes faintly, then cook the skewers 3 minutes per side, turning through all four faces, about 12 minutes total.

  4. Check the thickest cube reads at least 63C/145F on a probe; if not, give it another minute a side.

  5. Rest the skewers 3 minutes off the heat, warm the pitas in the same pan for 20 seconds a side, and serve with lemon wedges.
