Sucuk Pide
A boat of bread loaded with melting cheese and spicy garlicky sucuk, with an egg cracked in for the last few minutes. It is Turkey's answer to pizza and it fights dirty.

How you make it
Heat the oven to 240C with a baking tray inside.
Fry the sucuk slices in a dry pan over medium heat for 2 minutes until the edges curl and the red fat renders out; keep that fat.
Pinch the long edges of each base upward to form a rim, brush the inside with olive oil and the reserved sucuk fat, then scatter over the cheese, sucuk, pul biber and oregano.
Bake on the hot tray for 7 minutes, then pull it out and crack an egg into the centre of each pide.
Return to the oven for 4 to 5 minutes, until the white is completely set and opaque and the yolk is as you like it; cook to a firm yolk if you are serving anyone who should avoid runny eggs.
Brush the crusts with melted butter, scatter with parsley, and cut across into thick strips.
