Turon
Banana wrapped in a spring roll skin, rolled in sugar and fried until the outside is pure caramel glass. It is a dessert, a snack, and a reason to keep bananas in the house.

How you make it
Roll the banana halves in the brown sugar until well coated on all sides.
Lay a wrapper as a diamond, place a sugared banana half and a few jackfruit strips near the lower edge, fold the sides in and roll up tightly, sealing the tip with water.
Heat the oil to 175C in a wide pan and scatter the remaining brown sugar into the oil, where it will melt and start to caramelise.
Fry the rolls 3 or 4 at a time for 3 to 4 minutes, turning, until the wrapper is golden and a hard caramel coating has formed on the outside.
Lift onto a wire rack, never a plate, and leave for 3 minutes so the caramel sets hard instead of gluing itself down.
