Pork BBQ Skewer

Sweet, sticky, faintly charred pork on a stick - the smell that drifts down every Filipino street at dusk. The banana ketchup in the marinade is not a joke ingredient, it is the whole personality.

How you make it

  1. Mix the ketchup, soy sauce, sugar, garlic, citrus juice and oil, then reserve 3 tbsp for basting and toss the pork through the rest.

  2. Thread the cubes onto the soaked skewers, leaving a small gap between pieces so heat reaches every side.

  3. Cook under a hot grill or on a screaming griddle pan for 5 minutes on the first side without touching them, so a crust forms.

  4. Turn, baste with the reserved marinade, and cook 5 to 6 minutes more, turning once or twice, until the pork is charred at the edges and reaches at least 63C at the centre.

  5. Rest the skewers for 3 minutes before serving so the juices redistribute, then serve with the vinegar dip or rice.
