How you make it

  1. Boil the potato cubes in well-salted water for 12 minutes until completely tender, then drain and steam dry in the colander for 1 minute.

  2. Mash the potatoes until smooth, then beat in the aji amarillo paste, lime juice, olive oil and salt and spread on a cold plate to cool for 3 minutes.

  3. Mix the tuna with the mayonnaise, spring onions and a pinch of salt and pepper.

  4. Line a 10cm ring or a small bowl with cling film and press in a third of the potato, then the tuna, then another third of the potato, pressing firmly at each layer.

  5. Turn out, top with avocado slices and the last of the potato, and chill for 3 minutes before serving cool rather than cold.
