Al Pastor Tacos

How you make it

  1. Whisk the achiote paste with the pineapple juice, vinegar and oregano, coat the thin pork slices and leave them for 6 minutes, no longer.

  2. Get a heavy pan very hot over high heat with the oil, then cook the pork in two batches for 3 minutes a side so it chars rather than steams.

  3. Check the pork is cooked through, chop it into small pieces on the board and return it briefly to the pan with the diced pineapple for 1 minute of colour.

  4. Warm the tortillas in a dry pan for 20 seconds a side until flexible and lightly spotted.

  5. Pile the pork and pineapple into the tortillas and top with the onion and coriander.
