How you make it
Boil the potato cubes in well-salted water for 6 minutes until the outsides are just fluffy, then drain and leave to steam dry for 3 minutes.
While they dry, warm the olive oil in a small pan over low heat, add the garlic and both paprikas and stir for 20 seconds before the tomatoes go in.
Simmer the sauce for 8 minutes until thick and glossy, then blend smooth, stir in the vinegar and season.
Heat the frying oil to 190C in a deep pan and fry the potatoes in two batches for 4 to 5 minutes each until deep gold and audibly crisp.
Drain on paper, salt immediately, and pile onto a plate with the hot sauce spooned over or pooled underneath.
