Fried Calamari Sandwich
Madrid figured out long ago that the best thing to put in a bread roll is a heap of fried squid and nothing else. No salad, no sauce required, just lemon and a napkin you will need.

How you make it
Pat the squid rings thoroughly dry on kitchen paper; wet squid spits violently in hot oil.
Stir the grated garlic into the mayonnaise and split the rolls ready to fill.
Heat the oil to 190C in a deep pan. Toss the squid through the seasoned flour in batches and shake off every bit of excess.
Fry in three small batches for 60 to 90 seconds each, until the coating is pale gold and the squid is opaque and firm but still tender; drain on paper and salt at once.
Pile the hot squid into the rolls, squeeze over plenty of lemon, add the garlic mayonnaise if you want it, and eat immediately while the crunch lasts.
