Dan Dan Noodles

How you make it
Put a large pan of water on to boil for the noodles.
Whisk the sesame paste, soy sauce, chilli oil, vinegar, Sichuan pepper and garlic in a bowl, then loosen with 4 tbsp of hot water until it pours like double cream, and divide between two bowls.
Fry the minced pork in a dry hot pan for 4 minutes, pressing it flat and breaking it up, until it is crisp at the edges and cooked right through with no pink remaining, then stir in the mustard greens for 1 minute.
Boil the noodles according to the packet, usually 3 to 4 minutes, and lift them straight into the bowls with tongs, letting a little cooking water come along.
Top with the crispy pork and spring onions, and tell everyone to stir hard from the bottom before the first mouthful.
