Baiao de Dois

The northeastern classic where rice and beans stop being two side dishes and become one very happy pan. Squeaky cheese on top is not optional, whatever anyone tells you.

How you make it

  1. Fry the lardons in 1 tbsp of the oil over medium-high heat for 4 minutes until browned and their fat has rendered out.

  2. Add the onion and cook for 3 minutes, then the garlic for 1 minute, keeping everything moving so the garlic does not scorch.

  3. Stir in the beans, rice and stock, season with salt and pepper, and cook for 4 minutes until the liquid has been absorbed and the base is starting to crisp.

  4. Meanwhile fry the cheese cubes in the remaining oil in a small pan over high heat for 2 minutes, turning, until golden on at least two sides.

  5. Scatter the cheese and spring onions over the pan and serve straight from it while the bottom layer is still crunchy.
